JOB TITLE: Sous Chef. REPORTS TO: Executive Chef. SUMMARY: Assist the Executive Chef to manage with excellence the entire kitchen including all administration related matters, to ensure high food quality and presentation and controlling all relevant expenses. To perform all duties and responsibilities in a manner that ensures your safety and that of others in your workplace. RESPONSIBILITIES: To upgrade and maintain the quality of food in the operation. To assist the Executive Chef de cuisine in implementing a higher standard of production and operation. Implement new menu requested by Executive Chef. To supervise the daily operation of each section. To coach and train subordinates with regard to food quality and presentation. To introduce more effective and efficient methods of production. To control food cost and other expenses in his/her department by closely motoring food requisitions and business forecast. To develop and maintain a high level of communication within his/her department. To control and monitor manning levels in his/her section based on business forecast. To report all customer feedback both positive and negative to chef de cuisine. To ensure that a high level of hygiene, and sanitation is maintained in his/her department through close coordination with the executive housekeeper and chief steward. To comply with all company policies. SPECIFICATIONS: Good working experience in well known hotels or restaurants at least 6 years. Experience in field is a necessary and experience in Ireland will be a plus. Good communication skills. Excellent knowledge. Good team leader and motivation. Creative and aware of new food trends. Hand’s on personality. Due to the urgency of this vacancy, our client is not willing to go down the route of work permits/visa/sponsorship, therefore, all candidate must have permission to work in Ireland.
