This role must ensure that the restaurant operates efficiently and profitably while maintaining our client’s reputation and ethos. The manager must coordinate a variety of activities in line with the seasonal demand and events to include family events, weddings and corporate functions encompassing the house, the restaurant and hall. The manager is responsible for the business performance of the restaurant, as well as maintaining high standards of food, service, and health and safety. As the restaurant manager you are responsible for your team delivering a professional and superior customer experience. You must implement a worthy training scheme and ensure your staff adhere to the standards expected. Responsibilities include. Business activities: • Taking responsibility for the business performance of the restaurant - as part of your role you will introduce training to include upselling and knowledge of our food and products. • Analysing and planning restaurant sales levels and profitability with a focus on staff costs. • Organising marketing activities, such as promotional events and discount schemes. Work together with marketing Department re Facebook, monthly newsletter etc. Be aware of the agreed deadlines and ensure sufficient notification is given to the marketing manager to allow for a strategic approach to marketing. Agree “specials” in line with the calendar of events to allow sufficient time for marketing. • Preparing reports at the end of the shift/week, including staff control, food control and sales. • Adhering to and surpassing budget expectations as set by senior management. • Planning and coordinating menus in conjunction with the chef. • Introduce “unique” elements that are delivered consistently to the customer as part of their visitor experience. • Coordinating and managing dining events such as weddings, corporate functions, communions etc to include set-up, staff planning and floor management on the day of the event. • Responsible for the hiring, training and management of restaurant staff – ensuring all restaurant staff are aware of and are delivering their job responsibilities. • Managing your team effectively, transparent communication and ensuring all of your team are aware of the day-to-day goings on, what is required of them and any changes communicated clearly and efficiently, in a timely manner. • Create an efficient and transparent administration function for the restaurant to include; filing, reporting and budget management using the computer facilities available to the restaurant. Ensure this system allows weekly reporting to the senior management team. Front-of-house: • Excellent Customer Service Skills and ability to understand and respond to individual visitor needs and requirements, delivering the best possible customer experience to our visitors. • Coordinating the entire operation of the restaurant during scheduled shifts in line with the customer service standards as set by management. • Educate and deliver the agreed format of service in a consistent manner to all customers; create a process map of the procedure and ensure this is adhered to. • Organising and supervising the shifts of restaurant staff. • Managing staff on the floor and providing them with feedback. • Introduce a handover system and ensure all staff are aware of it and is part of their daily duties. They need to be aware of the day’s events and be set up for any groups/parties etc. • Responding to customer complaints. • Ensuring that all employees adhere to the company's uniform standards. • Meeting and greeting customers – lead by example to your team and display a proactive and energetic response to customer requirements. • Promote and upsell special In-House events e.g. Events, Afternoon Tea, House Tours and then send to the Visitors Desk for sales. Housekeeping: • Maintaining high standards of quality control, hygiene, and health and safety HACCP. • Checking stock levels and ordering supplies. • Preparing cash drawers and providing petty cash as required. • Helping in any area of the restaurant when circumstances dictate. • Ensure restaurant toilets and outdoor toilets are kept clean and checked regularly. • Maintain outdoor seating areas and indoor area at playground. Toilet (indoors and outdoors), ensure terraces are cleaned as appropriate and all record sheets updated. This list is not all-encompassing and is subject to change.
